A great surprise!

I ordered the book about a month ago , and it was supposed to arrive here the 20th of december, but as always the "reliable" postal service had a problem and when I gave for lost the book, yesterday the amazon package arrived!! I was so excited, since I saw the book I wanted it, and looked in almost every library in Mexico City, but none of them have it so it is!

For a snack I ate pita chips baked with Zaatar spices, a mid-eastern blend ...delicious..

For lunch I made ricotta and sundried tomato ravioli with a spicy sauce, waldorf salad (no chicken) and nopales sautéed in olive oil and onion , a true fusion food, Mexico meets Italy :D

And for dinner a salad with cucumber, lettuce, jicama and asparagus, and made a raspberry vinaigrette that quickly died in hands of my brother

The attack of the cookies!

I love cookies but I don't make them very often , these are a recipe from my grandma and they never fail...They are not vegan ( cuz here in Mexico there is no substitute for butter sadly) but they are so delicious I couldn't resist making them as a gift for the holidays.

And for your delight here’s the recipe of the delicious cookies

Oatmeal Cookies (Grandma’s secret recipe!)

-2 ½ cup oats (not instant)
-1 cup of walnuts (you can substitute with almonds, raisins, chocolate , etc)
-1 ½ cup White flour
- 1 tbsp. Baking powder
- ½ tbsp.salt
- ½ tbsp. Cinnamon
- ½ cup of heavy cream ( I used yogurt)
- ½ cup of butter
- 1 cup of brown sugar
- ½ cup of White sugar
- 2 eggs
- 1 tbsp. of vainilla scent


In a large bowl, cream together the butter, yogurt, white sugar and brown sugar until smooth. Beat in the eggs until well blended. Add the vainilla and the dry ingredients until the mix is homogeneous. With a spoon mix the walnuts and oatmeal.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.

*And a tip that my grandma put on the recipe is that you should’nt put two batches of cookies at the same time.

I wont go to Panama
I broke up with my almost 2 year boyfriend, but I am taking it a lot better than I imagine ...

I have a lot of free time

I am not that hungry

finalyy back!

Hey Im finally posting again ! Im back in Cuernavaca and with my computer repared I can finally post! . I pass all my subjects and now I will stay here until February, I think is a lot of vacations, but I plan on doing something productive in all that time, I'm going to go to yoga classes 4 times a week on an academy I found yesterday walking in the neighborhood, and it´s amazing, so peaceful and I´ll start next week, Im so excited!


In the food part, I made the other day Nopales Tacos, this is a dish that my boyfriend does very often and I think the only vegetarian food he does :P . Nopal is like a cactus, I know it may sound a little weird but actually is very common in here, they have a gooey texture, like the slim of the oatmeal but they actually taste amazing, and are very nutritive.

First you cut them in squares and steam them for about 10 minutes until they are tender and dark green. Then you cut some Manchego, or Mozzarela cheese in squares and let them melt but being carefully that it doesnt stick.

Then you can add, spices, chilly soy sauce, a Maggi sauce , and even lemon juice.

Finally you heat tortilla and put some in them and enjoy!, of course with some salsa for the flavor.

These is also another recipe I found in VegCooking, it tasted ok but the tofu needs to marinate more time.
